Ingredients
2 cups glutinous rice
3 cups coconut cream
1 cup coconut milk
1 cup brown sugar
Pandan leaves (optional)

Procedure:
*Wash the glutinous rice
*Add the coconut milk and pandan leaves. Add a lesser amount of coconut milk so the rice will not be fully cooked.
*Cook the rice in a low heat.
*In a medium heat, boil 2 cups of coconut cream. Set aside the remaining 1 cup for the latik.
*Add the brown sugar and stir constantly.
*when the mixture is thicken, add the cooked rice and lower the heat.
*Stir constantly until the rice become sticky.
*Biko is ready when it’s hard to stir and pull from the pan.

To make latik:
*Bring to boil the remaining 1 cup of coconut cream in a medium heat.
*Stir constantly until starts to thicken.
*Lower the heat and stir constantly until the cream separates into the coconut oil.
*Turn the heat off as it become golden brown. Drain the coconut oil. And set aside.

*Transfer biko in a baking dish. You can also put banana leaves in your baking dish.
*Flatten the surface and top with latik.
*And our biko is ready.
