Siopao Dough
3 cups all-purpose flour
⅓ cup sugar
½ tablespoon instant yeast
½ tablespoon baking powder double-acting
⅔ cup lukewarm milk
⅓ cup lukewarm water
3 tablespoon shortening
1 tsp vinegar to make dough white
Filling
250 grams ground pork
1 medium onion chopped finely
1 small egg
1 teaspoon garlic powder or 1-2 cloves garlic minced
1 tablespoon flour
½ teaspoon ground pepper1 tablespoon sesame oil* only if available
2 tablespoon oyster sauce* only if available
salt if needed
How to make the Dough
- Combine the flour, sugar, yeast, and baking powder in a large bowl. Pour in the milk and water and vinegar and mix a few times just to moisten the dry ingredients. Cut in the shortening and mix until a dough forms.
- Tip the dough onto a flat surface and knead until smooth and elastic. This usually takes about 10–12 minutes by hand or 8–10 minutes with a mixer.
- Let the dough rest for 20–30 minutes, or until it has risen to almost double its original size. (Meanwhile, prepare the filling.)
- Turn the dough onto a lightly floured surface and roll it into a log. Divide it into two portions. Return one half to the bowl and place it in the fridge to slow down the rising process.
- Divide the other half into five equal parts. Fold each piece toward its center several times until it is no longer puffy and becomes smooth. Then form each piece into a ball.
How to prepare the filling
- Add all the ingredients for the bola-bola (meatball) in a bowl. Mix until well combined.
- Cover with plastic wrap and let it rest for a few minutes or until the dough is ready.
