Cauliflower Chicken Casserole

Cauliflower Chicken Casserole is a hearty and nutritious dish made with tender cauliflower florets, shredded chicken, fresh spinach, mushrooms, and a creamy cheese sauce, topped with crispy panko breadcrumbs. Perfect for a family meal, it combines delicious flavors with wholesome ingredients.

Ingredients:

1 head of cauliflower, cut into small florets
1 cooked rotisserie chicken, shredded
3 tablespoons unsalted butter
4 tablespoons flour
2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Gruyรจre cheese
1 cup shredded mild cheddar cheese
3 cups fresh spinach
1 cup chopped mushrooms
1/4 cup panko breadcrumbs

Procerdure:

  1. Preheat the oven to 375ยฐF.
  2. Bring a large pot of water to a boil and add the cauliflower florets. Boil for 5 minutes, then drain and set aside.
  3. In a large sautรฉ pan, melt the butter over low heat. Gradually whisk in the flour and milk, stirring continuously for 3-4 minutes. Increase the heat to medium and stir in the salt and pepper.
  4. Add the cheese and continue stirring until fully melted. Then, mix in the spinach, mushrooms, cauliflower, and chicken, cooking for an additional 5 minutes.
  5. Transfer the mixture to a 9×9-inch casserole dish and sprinkle the panko breadcrumbs evenly on top.
  6. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 20 minutes, until golden brown and bubbling.
