Ingredients:
1 head of cauliflower, cut into small florets
1 cooked rotisserie chicken, shredded
3 tablespoons unsalted butter
4 tablespoons flour
2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Gruyรจre cheese
1 cup shredded mild cheddar cheese
3 cups fresh spinach
1 cup chopped mushrooms
1/4 cup panko breadcrumbs
Procerdure:
- Preheat the oven to 375ยฐF.
- Bring a large pot of water to a boil and add the cauliflower florets. Boil for 5 minutes, then drain and set aside.
- In a large sautรฉ pan, melt the butter over low heat. Gradually whisk in the flour and milk, stirring continuously for 3-4 minutes. Increase the heat to medium and stir in the salt and pepper.
- Add the cheese and continue stirring until fully melted. Then, mix in the spinach, mushrooms, cauliflower, and chicken, cooking for an additional 5 minutes.
- Transfer the mixture to a 9×9-inch casserole dish and sprinkle the panko breadcrumbs evenly on top.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for another 20 minutes, until golden brown and bubbling.
